Puff pastry with mushroom

I’m not going to tell you how brilliant a puff pastry is- everyone knows it! This time in a savour version: with mushroom and a thyme note. Quick and delicious appetizer, great for your guests!

Ingredients (make 12)
6 big mushrooms
3 tbsp Mascarpone cheese
3 tbsp sour cream
1 egg
½ teaspoon dry thyme
1 small onion
1 tbsp oil
1 package puff pastry
salt, pepper


Method
Cut 12 circle shaped cookies from the puff pastry, slightly bigger than a diameter of a single muffin pan, place them in a muffin pan (you don’t need to grease the pan). Slice the mushrooms, fry until golden. Sauté diced onion. In a bowl mix together onion, mushrooms, thyme, egg, cheese and sour cream. Season with salt and pepper. Spoon the mixture into a muffin pan onto puff pastry. Bake in a preheated oven to 400F/ 200 oC until golden brown (about 15 min.). Serve warm or cold.
