Meringue and currants cake


I decide to bake something special for a Sunday dinner at my parents in law, something for a dinner in a garden, something with fruit! My Grandmother gave me red currants so the choice was simple! The cake with red currants – typical Polish dessert, slightly modifies from the “Przy Stole” website.

Ingredients
cake:
3 egg yolks
2/3 cup powder sugar
vanilla sugar
1 ½ cups wheat flour
3 tbsp potato starch
3 full tbsp butter
5 tbsp milk
2 teaspoons baking powder
top:
3 egg whites
4 tbsp powder sugar
1 tbsp lemon juice
300 g red currants
pinch salt


Method
Mix egg yolks with powder sugar and vanilla sugar, add sieves flour (wheat flour and potato starch). Add melted and cooled butter and milk, mix. Spoon the batter into the prepared cake pan. Bake the cake base for 15 min at 360F/ 180 oC.
Beat the egg whites until stiff, gently add sugar. Combine the egg whites mixture with fruit. Spoon the mixture on top of the baked cake base. Bake again until golden.
