Eplepai – Norwegian apple cake (without fat)

There is nothing better than apple cake – don’t you agree? This Scandinavian version is very moist, crunchy because of almond flakes, and what is (the most) important it doesn’t consist any fat! To balance sweetness of the cake I put some cranberries on top of it. It is a very quick cake: take a spoon, mix the ingredients and it’s ready!!

Ingredients ( for a small cake pan, about 7 inch/ 18 cm)
3 apples
1 egg
2 tbsp butter
2 tbsp milk
¾ cup sugar
1 teaspoon baking powder
1/3 teaspoon salt
1 teaspoon cinnamon
½ teaspoon cardamom
½ cup almond flakes
¾ wheat flour
¼ cup frozen cranberries
2 tbsp coarse sugar to sprinkle the top

Peel apples, finely slice them. Mix the rest of ingredients, add apples. Spoon the batter into the lined cake pan. Bake in preheated oven to 180 oC (350 F), for about 50 min. (until the toothpick inserted in the centre comes out clean). Before serving sprinkle with coarse sugar.
