Toffee apple upside down cake




When the Husband decides to go for a diet, baking cakes seem to be the best idea ever! How can you resist the apple pie with cinnamon flavour? Add the caramel glaze flowing down the cake and the recipe for a delicious afternoon is ready!

Ingredients
glaze
1 apple
4 tbsp butter
1/3 cup brown sugar
cake:
2 big ground apples
2 large eggs, slightly whisked
8 tbsp butter
¾ cup brown sugar
1 ¾ cups wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
¼ ground ginger
¼ teaspoon ground nutmeg
3,5 oz (100 g) walnuts ( slightly roasted)
pinch salt


Method
Peel and grate 2 apples. 1 apple thinly slice. Heat up the butter with sugar in a saucepan, whisk. Pour the butter ‘toffee’ mixture into a greased cake pan. Place the apple slices on the ‘toffee layer’.

Mix butter with sugar and pinch of salt until fluffy. Gradually add whisked eggs. Well combine all ingredients. In a separate bowl mix sieved flour, spices, baking powder and baking soda. Combine both mixtures. Add apples and walnuts. Spoon the batter into a cake pan on top of the apples. Bake in preheated oven to 360 F/ 180 oC for about 40 min, until a toothpick stick in the center of the cake comes out clean. Remove from oven, let cool down for about 10 minutes, then place a cake plate on top, and wearing oven mitts, flip the cake out onto the plate. Serve warm with a scoop of vanilla ice-cream.
