Peach crumble with coconut

Such a crumble for me is a symbol of a slowly arriving Autumn. When there is hot I don’t feel like eating warm fruit, but when is colder and more and more apples, peaches and pears are in shops- it is a crumble time!


Ingredients (make 3 portions)
2 tbsp butter
2 tbsp wheat flour
1 tbsp wholemeal flour
2 tbsp dark sugar
1 tbsp honey
1 teaspoon cornstarch
¼ teaspoon baking powder
2 tbsp coco flakes
3 peaches
2 tbsp cranberries
pinch salt


Method
Mix all the crumble ingredients: flour, sugar, baking powder, coco flakes, cold butter. Place the fruit mix with honey and starch in ramekins. Cover it with crumble. Bake at 360 F/ 180 oC, until golden brown and fruit soft.
