Frankly speaking there is nothing better than a cookie eaten with an afternoon tea. Such a cookie should be the best! With a flavour of butter and vanilla and crunchy of course! Those are almost perfect, they keep the freshness for a long time and taste like those made by my grandmother with a special cookie machine.
Ingredients
2 tbsp oil
4 tbsp melted butter
2 eggs
1 teaspoon vanilla essence
lemon zest from 1 lemon
2 teaspoons baking powder
1 cup fine sugar
2 ½ cups wheat flour
pinch salt
Method
With a food processor mix oil, butter, eggs, lemon zest and salt, until smooth. In another bowl mix all the dry ingredients. Combine both mixtures and knead the dough. Cool down the dough in a fridge for about 1 hour. After 1 hour roll out the dough and cut the cookies out. Bake at 350F/ 175 oC for about 10 min. the cookies should be golden brown. Serve drizzled with powder sugar. Keep in a sealed box.
