Oatmeal cookies with wheat germ

Another attempt to (one of my favourite) the oatmeal cookies subject. These remind Florentines. They are very delicate, almost like a lace, less filling than ordinary cookies. A slight note of cinnamon, which is great for me, gets well together with raisins. And wheat germ – the health*!

Ingredients ( make about 40 cookies)
3 cups oatmeal
1 cup + 2 tbsp wheat flour
½ cup wheat germ
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon salt
1 cup butter
1 cup sugar (white)
1 cup brown sugar
2 eggs
1 ½ cups raisins (before baking I kept them in a bowl with hot water for a bout 10 min)


Method
Soft butter beat with both kinds of sugar until fluffy. Add eggs, whisk until smooth batter. Add dry ingredients, stir. At the end add raisins and oatmeal flakes, well combine. Drop a teaspoon full, three inches apart, onto your prepared baking tray, flatter slightly. Bake for about 13 min, at 360 F/180 oC. Cool for about 5 min. on a baking tray. Keep in a sealed box.
