Lemon and poppy seed muffins


I don’t know how about you but I lost my faith in the Spring this year. Not to mention the Summer...
In such a depressing moment I could only be cheered up by something sweet! Small cupcake filled with sunny lemon flavour and poppy seeds – in 100% did what it should!

Honestly those muffins are great! Moist and incredibly aromatic, keep its freshness for a few days – it is a big plus!

Ingredients
2 cups wheat flour
½ cup butter
1 cup sugar
1 cup sour cream ( I used 12%)
½ teaspoon salt
1 ½ teaspoons baking powder
¼ teaspoon baking soda
lemon zest from 2 lemons ( firstly blenched)
2 eggs
2 tbsp lemon juice
2 tbsp poppy seeds


Method
Beat butter with sugar and lemon zest until fluffy. Still stirring gradually add the eggs. In another bowl mix flour, salt, baking soda and baking powder. 1/3 of the dry ingredients mixture add to the butter mixture. Add lemon juice and ½ cream. Well combine. Add ½ of the rest of the dry ingredients mixture and the cream. Mix everything, add the rest of the flour and poppy seeds. Spoon the batter into the muffin pan. Bake at 360 F/ 180 oC for about 25 min. Slightly cool down, dust with powder sugar or put the icing on top.
