Butter cookies

Do you know that feeling when you bought a new frying pan/ egg whisk and you just need to use it immediately/right now! I had that feeling yesterday after I bought a cookie stamp. I was happy like a child when started to arrange the letters into words. I went through many recipes and chosen Nigella’s stardust cookies from her Christmas cookbook.

They are classic butter cookies. The salt makes their taste quite interesting.

Ingredients (make about 30 cookies)
3 oz (90 g) soft butter
3,5 oz (100 g) powder sugar
1 large egg
1 teaspoon ground ginger or vanilla essence
7 oz (200 g) wheat flour
½ teaspoon baking powder
½ teaspoon salt


Method
Beat the butter with sugar until fluffy. Still stirring add an egg, ginger (vanilla), flour, baking powder and salt. Well combine all ingredients. Form the dough into a ball shape, cover with plastic foil, and keep in a fridge for about 30 min. After 30 min. roll out the dough (3-5 mm thick), cut desired cookie shapes, place them on a lined baking tray. Bake at 360 F/ 180 oC until golden. Cool down on a rack.
