Woodman’s cake

This is a first recipe I’m making from the cookbook I got for Christmas. It was a great choice! The cake (in my mum’s opinion) is in Turkish style. Heavy, full of dates, nicely moist. You can easily eat it the whole week – it keeps its freshness very well. Only its name….

Ingredients
2 medium apples
6,5 oz (185 g) dry stoned dates
1 teaspoon baking soda
1 cup boiling water
4,5 oz (125 g) butter
1 cup sugar (you can add less)
1 egg
1 teaspoon vanilla essence
1 ½ cups wheat flour
2 teaspoons baking powder
pinch salt
cake cream
3,5 oz (100 g) butter
½ cup milk
¾ cup brown sugar
5 oz (150 g) coco flakes


Method
Peel and dice apples. Diced dates mix with a cup of boiling water and 1 teaspoon baking soda. Put aside to cool down. Mix butter with sugar until light and fluffy. Add an egg, vanilla and pinch salt. Gradually add flour with baking powder alternating with fruit to the butter mixture. Bake at 360F/ 180 oC for 60 min.
Cake cream: heat up the butter with milk, add sugar, coco flakes. Boil for 2 min on a low heat until gets thick.
Spread the coco cake cream on baked cake, place again in an oven for about 15 min. until coco flakes get golden.
