Turkish style – kubasili pide

This is my variation on a classical Turkish dish. It is a great combination of meat and simmered vegetables. To this “pizza” you can add cheese, minced meat or – as I did- dice meat. This dish is filling, with the insanely flavour of cumin. Drink ayran* with it and Welcome on the holidays!

* delicious ayran you can buy in supermarkets, but it’s also easy to make at home. You just need to mix natural yoghurt with water ( in 2:1 or as you like) and add some water.

Ingredients
Dough:
1 ½ cups wheat flour
1 ½ cups wholemeal flour
1 tbsp dry yeast
1 teaspoon sugar
2 teaspoons salt
about 1 ½ cups room temp. water ( enough to combine all ingredients)
10 tbsp oil
Stuffing:
500 g beef
1 onion
1 eggplant
2 peppers ( I used red ones)
1 stick celery
1 teaspoon dry pepper flakes
1 teaspoon cumin
dry chilli
oil for frying
salt, pepper – to taste
parsley


Method
Knead all the dough ingredients until elastic. Leave it for an hour in a bowl covered with cling film until double size. In a meantime make stuffing. In a large pan heat the oil with chopped beef, add chopped peppers, eggplant, celery and onion. Season with salt, pepper, cumin and pepper. Covered simmer for a few minutes. Cool it down.

After the dough double size divide it in 4. Each part roll out in an oval shape to thickness about 3 mm. Place ¼ of stuffing in a centre of each rolled out dough and roll the edges of it to the centre but leave a part of stuffing exposed. Bake them on lined baking tray at 200 oC (400 F) for about 20 min. Before serving sprinkle chopped parsley on top of each pide.
