Roasted chicken

There is nothing better than well done chicken for dinner. It should be juicy, seasoned and with a crunchy skin. These chicken drumsticks are exactly like that – just delicious!

Marinate them for min. 1 hour before roasting ( you can even keep them in the marinade for a whole day or night).

1 chicken ( or 8 drumsticks)
3 tbsp oil
1 teaspoon molasses (or honey)
1 teaspoon vinegar ( I used tarragon one)
½ teaspoon dry rosemary
¼ teaspoon ground pepper ( I used smoked pepper)
1 small onion
1 garlic clove
4 grains pimento
2 bay leaves

Mix all liquid ingredients for marinade. Finely chopped garlic and finely cut onion. Crush pimento grains, add bay leaves. Mix everything. Wash the chicken, dry it, season with salt and pepper. Put the chicken in the marinade, make sure the marinade covers meat well. Let the chicken marinade for min. 1 hour. After an hour place the chicken in a baking dish. Bake in preheated oven to 170 oC (340 F) until chicken skin is brown (during first 30 min. you may bake it in covered dish).

Eat with carrots with butter and thyme….
