Cherry pound cake


Simple fruit pound cakes are one of my favourites cakes! A few minutes of mixing with a food processor or just a spoon and voila a dessert is ready! On top I put some fresh or frozen fruit : cherries, apples, pears, plums, rhubarb… everyone will find something for himself!


Ingredients ( for a cake pan around 20 cm)
4 tbsp soft butter
1 tbsp vegetable oil
2 eggs
1 cup sifted wheat flour
¼ teaspoon baking powder
¼ teaspoon salt
¾ cup sugar (or less if you are using sweet fruit)
½ cup buttermilk
about 1 cup fruit ( I used frozen cherries and an apple)
Crumb:
½ cup brown sugar
½ teaspoon ground cinnamon ( I use also cardamom and ginger)
3 tbsp flour
1 tbsp butter


Method
Grease cake pan with butter and sprinkle it with some flour. In a bowl mix butter with oil and sugar until fluffy. Beat in an egg, mix. In another bowl mix dry ingredients (flour, baking powder, salt), add this mixture to the butter one alternating with buttermilk. Spoon the batter into the cake pan, put the cherries on top. In the same bowl where you made batter, mix all crumb ingredients, and sprinkle it on top of fruit. Bake at 180 oC (360 F) for about 45 min.
