Classic fruit cake (kuchen)

Here is a classic fruit cake. Moist and aromatic – every time a success! You can add any fruit ( plums are perfect), I twisted it with lemon zest. Ground cardamom and vanilla essence.

The recipe is from Bon Appetit (9/1997)

1 ½ cups wheat flour
1 ½ spoon teabaking powder
½ teaspoon cinnamon
¼ teaspoon salt
8 tbsp butter
2/3 cup sugar
2 eggs
½ cup sour cream ( I used minced cottage cheese)
2 apples
1 cup raspberries (frozen)

All dry ingredients (without cinnamon) sift. Mix butter with sugar, beat in one egg at the time. Alternating add flour and sour cream/cottage cheese to the egg mixture. Spoon the batter into the cake pan, put the fruit on top (peeled and dices apples, frozen raspberries). Bake for about 30 min. at 180 oC (360 F). You can glaze it when cooled.
