Angel wings


Another ‘must’ of the carnival time – fried desserts! Today angel wings (‘polish chrusciki’), one of my favourites. Must been eaten straight after fried, as soon as slightly cool – fresh are the best. I prefer thick, soft ones, but I know that most of people prefer those thin and crispy.

Ingredients (make 30-40 cookies)
200g (7 oz) wheat flour
3 egg yolks
pinch salt
3-4 tbsp thick sour cream
1 teaspoon baking powder
1 tbsp alcohol
about 500g (18 oz) frying fat
powder sugar mix with vanilla sugar – to sprinkle

Method
Mix flour with the cream. Make a hole in such a mixture and beat in egg yolks, add baking powder and salt. Knead until smooth. The dough should be light. Roll out the dough very thin and cut in stripes about 3 cm(1 in) wide and 15 cm (6 in) long. Slit each piece in the center, and pull one end through the slit. Fry the dough strips until golden, drain on the kitchen towel, sprinkle with powder sugar.
