The World become more beautiful only when I put together these two. Small, sweet cheesecakes on a dark crust, straight from USA. Slightly cooled, perfect as a small dessert after a dinner in a garden ( and actually they are effortless and quick to make!).
Ingredients (make 12, all at room temperature)
16 Oreo cookies ( 4 crushed, 12 whole)
500 g (18 oz) cottage cheese (triple milled)
½ cup sugar
½ cup mascarpone cheese
1 teaspoon vanilla essence
Mix cheese with sugar, add the mascarpone. Beat in one egg at a time, well combine. Add crushed cookies. Line muffin tray with baking paper. In a bottom of each mould place the Oreo, on top pour cheese mixture. Bake for 20 min., in preheated oven to 150 oC(300 F). Leave them in an oven with the slightly open door until cold. Keep for about 4 hours in a fridge before serving.
