Cottage cheese pancakes with creamy strawberries

It is obvious that you can eat cheese sandwich or jam sandwich for a breakfast. But isn’t just nice to have a morning filled with a smell of warm pancakes and fresh strawberries? Add nice company, sun behind the window and long conversation. I would love to start every day this way!
I served these cream cheese pancakes with delicious strawberries and mascarpone cheese sauce.

Ingredients ( make about 14 pancakes)
3 eggs
1 cup cottage cheese
½ cup milk
2 cups flour
2 tbsp sugar
1 teaspoon baking powder
¼ teaspoon salt
400 g (14 oz) strawberries
3 tbsp mascarpone cheese
3 tbsp sugar

In a large bowl whisk eggs with cheese. In another bowl mix flour, sugar, baking powder and salt. Add dry ingredients to the egg mixture and mix. Using a spoon place the batter on dry, heated Teflon pan. Fry both sides until golden.

Mash strawberries, add sugar. After few minutes mix strawberries with cheese. Serve warm pancakes with fruit sauce.
