Oatmeal muffins - healthy!


Firstly, thank you very much for all birthday wishes you wrote on my blog, I read them with pleasure! I do hope we have more birthdays to come!

Coming back to cooking, today extremely healthy and delicious dessert. Muffins filled with everything what is healthy and good for us. They taste similar to the oatmeal cookies and do crunch when eating.


Ingredients (make 12 muffins)
1 cup wheat wholemeal flour
1 cup oatmeal
½ teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
½ teaspoon cinnamon
1 egg
1/3 cup dark sugar
¼ cup butter
1 cup milk
additions: pieces of dark chocolate, cranberries, nuts, raisins…


Method
In one bowl keep the oatmeal covered with ½ cup milk for about 10 min. In another bowl whisk egg with sugar, add butter. Add flour, the rest of milk and the rest of dry ingredients to the oatmeal mixture. Mix both mixtures ( batter has a loose texture, reminds a bit a sand mix with water), add cranberries, chocolate, spoon the batter to muffin pan. You can sprinkle the top with the dark sugar. Bake at 180 oC (350 F) , for 15-18 minutes.
