Pickled red onion

One of many things I can say about my dad is that he really knows the good cuisine (tasting and cooking). Father’s Day appetizer seems to be an ideal gift for him! This year my dad will try pickled red onion in deep pink colour. Hope he will like it!

3 medium red onions
1 ½ cups red wine vinegar
½ cup water
1 cup brown sugar
8 cloves
2 bay leaves
½ teaspoon coriander
¼ teaspoon cumin
(you may also add cinnamon stick)

Finely slice the onions, put in a jar. In a pot mix all the marinade’s ingredients and bring to boil. Hot mixture pour in a jar with onion, close the jar tightly, start eating after 24h from preparation.
