It’s impossible to not notice, that for a while the weather hasn’t spoiled us. During such a sunny days somehow I prefer having dinner in a garden than cooking and standing by the oven. To make effortless really delicious and healthy meal you need just some vegetables, herbs and bread. But from the begining….

Slice eggplant, slices should be about 1 cm in thickness, rub them with oil and garlic, wrap tightly with aluminium foil. Courgette cut in thin “ribbons”, season and fry in grill pan or directly on a barbecue. Pepper wrap in aluminium foil and roast (do the same with eggplant). When vegetables are ready, arrange them on warmed bread, season with herbs and chilli. Eat warm, topped with oil.
