Vanilla cupcakes with vanilla frosting

I must admit that it’s the first time I pay such an attention to decorate the cupcakes (usually I just sprinkle powder sugar and the cupcakes are ready!). This time I didn’t only decorate the cupcakes with the frosting but also sprinkle with pastel sugar pearls! The cupcakes were just delicious (moist, fluffy and aromatic), for sure will make them again. A little bit in a sweet Barbie style!

Ingredients ( make about 18 cupcakes)
1 ½ cups wheat flour
1,7 oz (50 g) soft butter
1 cup sugar
1 ½ teaspoon baking powder
2 tbsp oil
2 large eggs
½ cup milk
½ teaspoon vanilla essence
pinch salt
frosting:
4,5 oz (125 g) cream cheese (i.e. Philadelphia)
0,7 oz (20 g) butter
¼ teaspoon vanilla essence
2 tbsp powder sugar ( or to taste)


Method
Beat butter with oil until fluffy, white mixture. Add sugar, beat again. Beat in one egg at the time. In another bowl mix flour with baking powder. Add the flour mixture to the butter mixture alternating with milk, well combine. Spoon the batter into the prepared muffin pan up to ¾ heights. Bake for 20 min., at 340 F (170 oC). Cool.

All the frosting ingredients blend until smooth. Put the frosting on top of each cooled cupcake.
