For a long time I was looking for a recipe to make buns with a characteristic taste reminding me holidays I spent in the south of Germany. Finally, I made it! In my opinion these buns are great as a sweet breakfast finish or even an afternoon dessert with a spot of jam. Quite heavy and strongly buttery. Delicious.
I served them on Piotr’s grandparents plates, they’re over 100 years old- can you imagine!?
Ingredients (make about 7 buns)
2 teaspoons dry yeast
¼ cup warm milk
3 tbsp sugar
1 ¼ cups wheat flour
¾ teaspoon salt
2 eggs (+ to brush buns)
50 g (1,7 oz) soft butter
Method
In a large bowl mix yeast, milk, sugar and ¼ cup flour. Put aside in a warm place for about 20 min.
After 20 min, when yeast start to slightly foam add flour and salt. Knead for 5 min. (better with a food processor), add one egg at the time. Put a dough aside for another 5 min, add butter. Knead again, put aside for about 1 hour until the dough doubled in size. Divide the dough into 7 almost equal balls. Place them in the baking pan, leave in at room temperature for about 20 min. Brush the buns with whisked egg. Bake for about 20-25 min, at 180 oC/ 360 F.
