Flapjacks

The flapjacks recipe is modified version of bars presented by Sophie Dahl. In my opinion they are really delicious and addictive. So don’t be fooled by the appearances of the healthy oatmeal cookies, because there is a lot of butter in them! But I don’t care and I keep eating them !
( If you will add 2/3 less of ‘wet’ ingredients –butter and honey- you will get delicious granola for breakfast!)

Ingredients
150 g oatmeal
100 g coconut flakes
½ teaspoon salt
¼ cup honey
100 g butter
4 tbsp wheat flour
½ teaspoon baking powder
handful of raisins
handful dried cranberries
4 slices (chopped) dried pineapple
some dried apricot or other dried fruit


Method
In a small pot melt butter and warm up the honey. In a bowl mix all the other ingredients, add warm butter and honey. The cake pan (about 20X30 cm) line with baking paper. Spoon the batter into the cake pan. Bake at 360 F (180 oC) until golden brown. Slightly cooled take out of the pan and cut in cubes. Kept in a sealed container are fresh for almost a week.
