Parmesan caraway cookies

Bravely today I suggest you cheese cookies full of old (although fresh) good parmesan cheese. Savour, not too salty with a slightly smoked aroma. Attention: may be addictive!

6 oz (170 g) grinded parmesan
6 oz (170 g) wheat flour
3,5 (100 g) butter
2 eggs ( 1 to for the batter+1 to brush the cookies with)
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon grind coriander
½ teaspoon dried thymes
2 tbsp cold water
2 tbsp caraway (crushed in a mortar)

Knead all the ingredients until elastic. Cover with an aluminium foil and put in a fridge for minimum ½ hour. After ½ hour thinly roll out the dough and cut the desired shapes. Put in a lined baking tray, brush with whisked egg, sprinkle with cumin. Bake for 10 min. (until golden) at 400 F (200 oC).
