Ladybugs have dots and so do cupcakes


These muffins are mini versions of classic cake. At least they taste like that. Moist, not too sweet almost perfect. I added vanilla sugar and some chocolate chips on top. Next time I’ll make them with lemon zest. And it will happen soon!!


Ingredients (make 12 muffins)
60g (2 oz) room temp. butter
½ cup sugar
2 eggs
1 ½ cups wheat flour
½ cup milk
¼ teaspoon salt
1 teaspoon baking powder
additions: vanilla sugar, lemon zest, chocolate….

Method
Mix butter with sugar until fluffy. Add salt. Beat in eggs –one at the time. Add sifted flour with baking powder alternating with milk – don’t mix too long- only until the ingredients are well combined. Pour into muffin pan, bake at 160 oC (320 F), for about 20 min.
