Extra quick omelette with divine plums



I dream about mornings with a smell of freshly baked rolls. I could give a lot for a daily delivery of crispy baguettes and sourdough bread! As the world is not perfect, and I don’t have enough of strong will to regularly bake bread I’m left with “mornings alternatives”. Very often I start my day with different omelettes, pancakes or crepes. All you need is 2 eggs, a little bit of flour and something tasty on top! And as for the matter……

Ingredients
Favourite omelette – 2 beaten eggs, a little bit of flour, drop of milk and pinch of salt
10 sweet plums
1 tbsp butter
1 tbsp brown sugar muscovado
¼ cup water
big pinch cinnamon
big pinch pimiento (optional)
2 cloves


Method
Fry the omelette. Heat the butter in the pan, add the plums cut into quarters, sugar, water and spices. Fry for a few minutes until plums are juicy and soft and sauce thick. Warm plum sauce put on top of the omelette and enjoy your breakfast!

Brazilian coconut buns


I don’t know how is it possible but despite of the huge amount of sweets I ate during Christmas I don’t have enough, and still want more! Today something for breakfast with a tropical flavour. Small, sweet buns with coconut filling. Warm taste like classic coconut cookies. Cold can be served also as a dessert. Extra easy to make Brazilian classic!

Ingredients (make about 12 buns)
dough:
½ cup milk
1 egg (+1 to to brush over buns)
2 cups wheat flour
30 g (1 oz) butter
2 tbsp sugar
2 teaspoon yeast
¼ teaspoon salt
filling:
1/3 cup sugar
¼ cup milk
¼ cup milk
¾ cup coconut flakes


Method
Knead all dough ingredients ( for about 8 min. or if you are using a food processor with a dough hook for about 5 min.). Put it aside in a warm place, for about 1-2 hours, until double its size. In a small pan warm up (for about 2 min.) all the filling ingredients until sugar melt and coconut flakes absorb milk. Cool the filling mixture.
When the dough double its size, roll it ( about 5 mm in thickness), evenly spread the filling mixture. Starting at a long edge, roll up the dough jelly-roll style. Cut the roll into equal pieces (about 12), place them on the greased baking pan, leave in a warm spot for another 30 min. Brush the buns with whisked egg, bake until golden brown (15-20 min.), at 200 oC (400 F).

Banana breakfast pancakes


Recently I often suffer from lack of bread. In such a ‘no bread’ mornings I usually eat porridge or some pancakes. Sometimes with cottage cheese, sometimes with apples or like today with banana. The last is special because you don’t need (unless you want to) to use eggs to make them. Add honey or maple syrup and the breakfast is ready!

Ingredients (make 10 pancakes)
75 g (2,6 oz) wheat flour
75 g (2,6 oz) wholemeal flour
1 ripe banana
lemon juice from 1/3 lemon
pinch cinnamon
2 tbsp melted butter
1 teaspoon baking powder
pinch salt
½ cup water ( or milk) plus as much as you need to get a creamy consistence batter


Method
In a bowl mix dry ingredients. Peel and mash banana. Mix milk with banana and melted butter. Combine all ingredients with such an amount of liquid to get a creamy consistence. Fry the pancakes on a Teflon pan (you don’t need to use oil). Serve warm with a marmalade, maple syrup, honey…


(non)Classical breakfast: eggs and toasts

Someone who combined butter and toast with egg without hesitation I’d call Genius! Classic breakfast trio in a twisted version. Geometrical shapes on a plate: square toast with oval egg. Plus a cup of black coffee and I can start the new busy day!


Ingredients
2 eggs
2 slices of bread
1 tbsp butter
salt, pepper


Method
Cut in round holes in the slices of bread ( you can use a glass). Spread already melted butter on both sides of toast. Toast both sides of bread in heated pan. Beat in an egg in a toast’s hole, season with salt and pepper. Cover a pan and keep it on a low heat, until the egg white cut off. Serve warm.
