For months I was thinking about making the biscotti but I couldn’t make them.....until now. I was successful: all biscotti were eaten ( I would even say: absorbed) at a lighting speed. Well, there is nothing else left for me than make more soon.
Ingredients ( make about 30 large biscotti)
1 cup almonds
4 oz (120 g) soft butter
1 ½ cups sugar
2 eggs
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
3 cups wheat flouR
handful dried apricots ( cut in 2 or in 3)
handful raisins
4 drops almond oil
Method
Mix sugar with butter until fluffy, add eggs and almond oil. Stir in flour, baking soda and salt. Add dry fruit, combine. Place the dough on a floured counter, shape into a log: 10 inch/ 30 cm long and 2,5 inch/ 8 cm high. Bake in preheated oven to 350 F (175 oC) for about 1 hour (until slightly golden). Cooled log cut into slices, 0,5 inch thickness. Lay slices back on a baking tray and bake until golden for about 15 min.
