Poppy seeds and citrus yogurt muffins



Continuing, today I suggest you another recipe from classic “How to be a domestic goddess” – lemon yogurt muffins - in my version with the scent of oranges and tempting poppy seeds.
I covered them with citrus glaze and that’s how I got delicious and effortless after dinner desert.

Ingredients

4 fl oz (125 ml) natural yogurt (I used thick, Balkan type one)
2,5 oz (75 g) melted butter
2 eggs
lemon zest of 1 lemon
orange zest of 1 orange
¼ teaspoon baking soda
½ teaspoon baking powder
4,5 oz (125 g) sugar
5,3 oz (150 g_ wheat flour
1 tbsp poppy seeds
½ cup powdered sugar
lemon juice of ½ lemon


Method
In a mixing bowl combine yogurt, eggs, lemon and orange zest with orange water. Stir in dry ingredients until well combined. Divide the batter among the buttered muffin cups (I used the porcelain ones), bake in preheated oven to 340F/ 170 oC for about 25 min. Still warm muffins remove from the baking cups/tin and cover them with lemon glaze (whisk together powder sugar and lemon juice), sprinkle with poppy seeds.

Potato muffins



Those muffins are a delicate combination of potato puree and mushroom aroma. Baked are nicely crisp and brown. They could be even more delicious with a mushroom thick sauce. That’s a version I’ll make soon!
Great as an appetizer or dinner’s addition.

Ingredients (make 12 muffins)
3 cups mashed potatoes
handful dry forest mushroom
1 onion
1 teaspoon fresh rosemary
2/3 cup wheat flour
2 whisked eggs
2 teaspoons baking powder
salt, pepper


Method
Soak the mushroom in a cold water. Chop drained mushrooms. Sauté mushroom with chopped onion and rosemary. Cold and mashed potatoes mix with remaining ingredients, season to taste. Spoon the batter into a lined muffin pan. Bake until golden at 360F/ 180 oC.

Almost vanilla muffins


When you took out all ingredients, started to prepare the batter and then you realized that your Mom borrowed your muffin pan don’t panic! Instead grease ramekins, spoon the batter into them and bake the biggest muffins in your life! From this amount of ingredients you can get 6 giant muffins! One will be enough as a dessert for 2 people!

Ingredients
2 oz (60 g) soft butter
2 eggs
½ cup sweet cream
½ cup sour cream
2 cups wheat flour
¼ teaspoon baking powder
¼ teaspoon baking soda
pinch salt
2 oz (60 g) chocolate chips or chopped chocolate
seeds from ½ vanilla stick or vanilla extract


Method
Mix butter, sugar and vanilla until fluffy. Continuing stirring add one egg at the time. In another bowl sieve all dry ingredients (flour, baking powder, baking soda, salt). Add 1/3 dry ingredients mixture and cream at time to the butter mixture, mix. Gently stir in chocolate chips. Spoon into prepared muffin pan/ramekins, you can also put some remaining chocolate chips on top of each muffin. Bake at 360F/ 180 oC until golden, for about 20 min.

Gingerbread muffins

Christmas without gingerbread – no way! I can’t imagine that! I’m sure if my Mom wouldn’t have bake gingerbread each Christmas I would myself start bake those muffins. They are easy, quick, taste amazing and fill the full house with a Christmas aroma. Perfect!

The recipe is from ‘Moje wypieki’ website.

Ingredients
9 oz (250 g) wheat flour
½ teaspoon baking soda
1 teaspoon baking powder
1 ½ teaspoon ground ginger
1 teaspoon cinnamon
¼ teaspoon ground or crushed gloves
1 egg
2 oz (50 g) dark Muscovado sugar
2 oz (50 g) light Muscovado sugar
5 fl oz (150 ml) milk
¼ teaspoon balsamic vinegar
6 tbsp oil
6 tbsp golden syrup
4 tbsp molasses (or honey, maple syrup)


Method
In a bowl mix all dry ingredients: flour, baking soda, baking powder, spices, sugar. In another bowl mix the wet ingredients: egg, milk, vinegar, oil, golden syrup, molasses. Gently combine the dry ingredients with wet ingredients.

Spoon the batter into a lined muffin pan. Bake about 15-20 min. at 400F/ 200 oC. You can decorate muffins with an icing or powder sugar.

Banana and dulche de leche muffins

When I just saw on "Bruilion" website the recipe for banana muffins with dulche de leche, I had to make them immediately ! Just imagine their sweet flavour spreading all over the house… the flavour of a home-made cake!

Ingredients
1 ½ cups wheat flour
½ teaspoon baking soda
½ teaspoon baking powder
4 tbsp Demerara sugar
10 tbsp butter
1 egg
¾ cup natural yoghurt
1 banana
¾ cup dulche de leche (made with a condensed milk)
plus: sugar to sprinkle


Method
In one bowl mix all the dry ingredients. Melt and cool down the butter. Mix the butter with whisked egg and yoghurt. Add mashed banana and dulche de leche. Combine both mixtures. Spoon the batter into prepared muffin pan (up to ¾ height). Each muffin top sprinkle with brown sugar. Bake for about 25 min. at 360 F/ 180 oC.


Apple and ginger muffins

My kitchen weight is broken. It’s not exactly broken: I just forgot to change batteries but the fact is my weight doesn’t weigh.

I really wanted to eat something sweet. The recipe had to be more based on intuition and cups than weigh. I went through the Internet and found blueberry muffins! As I didn’t feel like blueberries I decided to make muffins with apples and cinnamon. This flavour put me on my feet! I baked delicious muffins with candid ginger! The muffins are moist and keep its freshness quite long. Probably they will become my base muffin recipe J

Ingredients
2,5 oz (70g) butter
2 cups flour
1 cup sugar
1 ½ teaspoons baking powder
½ teaspoon salt
2 large eggs
½ cup milk
1 teaspoon vanilla essence
2 cubed apples
2 tbsp chopped candied ginger
cinnamon and nutmeg to sprinkle


Method
Mix butter with sugar until fluffy. In another bowl mix flour with baking powder and salt. Add one egg at the time to the butter mixture, mix. Gradually add flour. Pour in the milk, gently combine all ingredients. Add apples and ginger, mix. Spoon into a prepared muffin pan. Sprinkle muffins with spices. Bake for about 25 min at 380F/ 190 oC until golden brown.

Chocolate muffins

Those are the very first muffins I baked in my whole life! Not exactly those but made from this Nigella’s recipe. And since than I used different recipes to make muffins, those will stay my number one! Seriously, there is no better ones!


Ingredients
9 oz (250 g) wheat flour
2 teaspoons baking powder
½ teaspoon baking soda
6 oz (175 g) sugar
sugar, vanilla essence
2 tbsp cocoa
9 fl oz (250 ml) milk
3 fl oz (90 ml) oil
1 egg
you can add 150 g chocolate chips


Method
In a bowl mix all ‘wet’ ingredients: milk, oil and egg. In another bowl mix ‘dry’ ingredients: flour, cocoa, pinch salt, baking powder, baking soda and sugar. Gently combine both mixtures. Bake at 400F/ 200 oC for 20 min.
I decorate them with dark chocolate and silver sugar sprinkle.
